英文表現教室(18)日本料理の英語名称

今回は、比較的「初歩的」な日本料理の英語表示を扱ってみたいと思います。

*日本語のまま=

1)Sukiyaki= Slices of beef boiled with seasonings of soy sauce, sugar, and Japanese sake for cooking. Together with beef Chinese cabbage (=hakusai), bean curd (=tofu) devil's tongue(=konnyaku) are boiled. Sukiyaki is one of the typical Japanese dishes favorably eaten by Japanese and foreigners.

2)Sashimi= Sliced raw fish most favorably eaten by Japanese. The kinds of fish most favored are tunas(=マグロ),bonitoes(=かつお)、octopuses(=タコ)、shrimps(=えび)、and squids(=イカ).

3)Sushi=    Various foods placed on pieces of hand-rolled boiled rice seasoned with vineagar(=酢).
Like sashimi、most favored stuff is tuna, bonito, shrimp、squid、octopus, salmon roe(=イクラ)and also vegatables like cucumber(=キュウリ)and seaweeds.

4) Miso Soup=味噌汁  A kind of soup produced with dried bonito fish powder, and seasoned with miso(=bean paste). Various things are added into this soup , such as sliced pork, some Chinese cabbage, or some other vegetables.

5) Noodles(Udon) Japanese noodles. There are various kinds of Japanese noodles. The simplest kind is called SU-UDON, consisting of Japanese noodles and sliced Welsh onions(=Negi).
Kitsune-Udon(=Fox Noodles) is so called, because foxes are said to be fond of pieces of
fried bean curd(=aburage). and Kitsune-udon contains some pieces of fried bean curd in addition to Negi.
Tukimi-Udon is so called, because a raw egg is added to the Kitsune-Udon, and the yellow of an egg looks like a
full moon. Also pieces of kamaboko(=slices of fish paste) are added in addition to an egg.
Tempura-Udon is so called, because a piece of Tempura, usually fried shrimps, are added to Su-Udon.  

6)Tempura   Tempura is also favored by most foreigners as well as Japanese. Tempura means fried fish and fried
vegetables. For instance, a shrimp is covered with wheat powder pasted with raw egg, and is fried inside the boiling
vegetable oil of high temperature. Onions, sweet potatoes, carrots are some of the vegeables loved by Japanese.
Small fishes like sardines, horse-mackerels, shrimps, or squids are also fried to make tempura.
